T.G.I. Monday!

Sunday night is when everybody in the country resolves to begin the next day by eating better, right? Somehow, we feel that all the hard work we do during the week needs to be rewarded with fat and sugar on the weekend. Am I right? So Monday morning is the diet time. How long this resolution lasts is up to you, I'm not judging. What I am asking, however, is how does one commit to dieting on Monday morning when one made BT cake on Sunday afternoon?
BT cake is a gloriously famous (ok, within the bounds of my family and neighborhood) chocolate cake made from scratch. It takes a little more effort than Duncan Hines boxes (blech) but your efforts are rewarded ten-fold. It is thick, moist and tastes like your great-grandmother made it. So what I'm saying, is that it's wonderful. But get this--it is even more wonderful the next morning. It has cooled down, the frosting has set and it makes the BEST. BREAKFAST. EVER. (Think of Bill Cosby here)

So it's tough to do anything but wake up on Monday and feed your children a healthy, whole-grain breakfast with organic juice, send them off to play, and then finish off the pan of BT Cake. Here's the recipe for your eating pleasure!(The cake, not the recipe...) (Imagine my delight when I found a slightly modified version of this recipe on Martha Stewart's web site titled "Perfect Chocolate Cake". That's right, Martha!)

BT Chocolate Cake
Sift together:
3 cups flour
2/3 cup cocoa powder
2 cups sugar
2 tsp baking soda
1 tsp salt

Add and mix:
1 cup vegetable oil
1 cup sour milk (can be made by adding 1 cup milk to several tablespoons of vinegar and letting it sit for five minutes)
2 eggs
1 tsp vanilla

Add 1 cup boiling water and finish mixing.

Pour into greased 9x13 pan and bake for 15 minutes at 325. Raise temperature to 350 and bake for another 15-30 minutes--until a toothpick comes out with moist crumbs.

Frosting
In a saucepan over medium-low heat, melt one cube of butter. Add 1/4 cup of cocoa, 4ish tablespoons of milk and a teaspoon of vanilla. Remove from heat and whisk together. Add 4 cups of powdered sugar and beat well. Voila!

On Monday morning I usually take one 'last' bite of Sunday afternoon dessert. Then I put the pan in the sink. Then I sneak back and take one more bite from the sink. After that I turn on the water to run all over it. Only then is it finally over and Monday's diet can begin :-)

I made a BT cake on Sunday too! Then of course I had it for breakfast and lunch until like Laurie, I filled the pan with water (two pieces still left) because the Monday diet was turning into the Tues diet
